Biological function
Lysozyme is an antimicrobial enzyme that preferentially hydrolyzes the beta-1,4 glycosidic linkages between N-acetylmuramic acid and N-acetylglucosamine in the cell wall structure of certain microorganisms, such as Micrococcus lysodeikticus.

Preparation Method
Native protein purified from Egg Whites
Activity
>=5,000 units per mg dry weight. One Unit is equal to a decrease in turbidity of 0.001 per minute at 450 nm at pH 7.0 and 25°C, using a 0.3 mg/ml suspension of Micrococcus lysodeikticus cells as substrate.
